Ingredients for 4 people:

  • 200g of Fish
  • (Monkfish, Red Mullet, Bream, etc.)
  • 8 fresh Prawns
  • 8 Clams
  • 1 large Potato
  • 4 small Chives
  • 400ml Fish Broth
  • 400ml Shrimp Broth
  • 200g Rice with PDO Valencia
  • 0.4g Saffron
  • Salt to taste


Clean the fish and prepare the fumet with the bones, reserving its meat. Clean the prawns and prepare a red broth with the heads, reserving the meat. Divide the potato into four portions. Then, put the red broth to cook, which we will then mix with the fumet and let the mixture boil.

Next, add the rice, the saffron and salt. Cook over moderate heat for 15 minutes and then let it rest for another 5 minutes, which will give it the consistency of honey. During the cooking of the rice, we will prepare the garnish: put the fish meat, the prawns, the clams, the chopped potatoes and the chives in a frying pan. Cover the pan and put it in the oven for 4 or 5 minutes. When the clams open we take out the pan.

Suggestion for presentation: serve in a soup plate, place the rice in the centre and the garnish next to it.
