In the separate area of the Cocktail Restaurant, in Katerini, a unique seminar was successfully held to present the sustainable aspect of the cultivation of the Greek mesosperm rice, variety Ronaldo, within the framework of the EU RICE program, on Monday 11/20/2023.
At the Seminar, the Culinary Expert Smaragda Makri, presented through three recipes, which she prepared live, the particularities of Greek meso-sperm rice, the importance of utilizing local materials, seasonality, but also the dynamics of the evolution of traditional recipes. The dishes he prepared and the attendees had the opportunity to try were:
- Crispy rice balls with cuttlefish ink and mussels
- Leeks stuffed with rice, wild boar, chestnuts and berries
- Syrupy apple rice cakes with honey
The guests, representatives of agencies, professional organizations, catering, hospitality, media and journalists, were informed about rice, produced in Europe, a product of high nutritional value, rich in nutrients and safe, since it is cultivated in compliance with the strict European Regulations for agricultural production.
