On Monday, January 31st, the course “Valencian rice: from tradition to the avant-garde” was held at the CDT in Valencia, taught by the award-winning chef Quique Dacosta and Santos Ruiz. We took a tour of the Valencian rice world, from its cultivation, varieties, traditional dishes and cutting-edge techniques.
