Baked rice in pumpkin

Ingredients for 3 persons:

  • 1 pumpkin
  • 300 grams of pork rib strips
  • 200 grams of bacon
  • 100 grams of pork snout
  • 250 grams of rice
  • 100 grams of boiled chickpeas
  • 3 onion black pudding sausages
  • 1 potato
  • 1 tomato
  • 1 garlic bulb
  • salt
  • colouring
  • 1 little spoon of sweet paprika
  • 1 grated ripe tomato
  • 500 grams of stew broth

Preparation:

1.-Roast half a pumpkin at 180 C° for one hour. Remove the seeds and leave the pulp.

2.- In a frying pan, lightly fry the ribs, the bacon and the pork snout.

3.-Add the paprika and the tomato to that oil, fry lightly and add salt, then the rice, stir and remove from the heat.

4.-Place half the rice in the pumpkin and top it with the remaining ingredients. Finally, add the remaining rice and place the pumpkin in the oven at 200 C° degrees, until the broth is absorbed (approximately 40-50 minutes).
