Rice pie with cheese and yogurt foam flavored with mint

Ingredients for 6 people

For the dough:

  • 500 gr. all purpose flour
  • 100 ml olive oil
  • 1 tablespoon of vinegar
  • 1 teaspoon of salt
  • 200 ml warm water

For the filling:

  • 1 and 1/2 cups of glazed rice
  • 500 gr. feta cheese or 250 g. feta cheese and 250 g. cream cheese
  • Salt and pepper

For the porridge:

  • 100 gr. olive oil
  • 100 gr. fresh melted butter
  • 1 cup of milk
  • 3 eggs
  • Salt

Preparación:

Put the flour in a bowl. Make a well in the middle and add the oil, vinegar and salt. Grind the flour with our hands well, to make it like trahanas. Add the water little by little until it becomes a nice elastic dough. Let it rest covered for half an hour.

Meanwhile, prepare the filling. Boil the rice in salted water for 5 minutes and strain it. Let it cool a little, crumble the cheese and mix it with the rice. Add some salt and pepper.

Grease the pan. Divide the dough into two parts. Roll out half of the dough into a sheet slightly larger than the pan and place it on the pan. Layer the filling. Open a sheet with the second dough, the same size as the pan and cover the pie. Close the pie around and cut it into pieces. The knife should not cut all the way down the pie, only the surface and not everywhere.

Elsewhere it should be cut so that the porridge penetrates the rice and elsewhere there are some connection points, so that when we pour the porridge, the cut pieces will not leave the dough and spoil the surface.
Whisk all the porridge ingredients together to combine. Pour over the pie and let it stand for half an hour.

Bake in a preheated oven at 180 C on the resistances, until golden brown, about an hour.
